This traditional southern Iranian dish features the aroma of saffron, the natural sweetness of dates, and the pleasant texture of rice, making it both flavorful and wholesome.
According to Saed News’ cooking section, Kharma Polo (Date Palm Rice) is one of the traditional and old dishes of southern Iran, especially in Khuzestan Province and the city of Ahvaz. In these regions, due to the abundance of palm groves, dates play an important role in local cuisine and are used in many dishes. Kharma Polo is prepared by combining Iranian rice with dates, walnuts, raisins, and aromatic spices, resulting in a sweet and pleasant flavor.
In the past, this dish was mostly prepared as a nutritious meal to provide daily energy or served at family gatherings. Today, different versions of Kharma Polo are made across Iran, including variations with chicken, ground meat, or completely meat-free.
Dates are among the most nutritious natural fruits with high nutritional value. Their use in dishes like Kharma Polo not only enhances flavor but also increases the overall nutritional content of the meal. Dates are rich in fiber, potassium, magnesium, and antioxidants, and they help boost energy levels, improve digestive function, and strengthen the immune system. The natural sugars in dates also provide quick and healthy energy, making them a suitable ingredient for energy-rich meals like Kharma Polo. In this recipe, a simple meatless version is presented for a light, nutritious, and quick dish.
Rice: 1 cup
Dates: 1 cup
Whole milk: 2 cups
Melted butter: 1 small cup
Raisins: 1/2 cup
Saffron: 1/2 teaspoon
Walnuts: as needed
Salt: as needed

Make a lengthwise slit in each date and remove the pit. Then sauté the pitted dates in a pan with a small amount of butter over low heat. Continue until they become glossy and slightly caramelized. This enhances the flavor and softens the texture of the dish.
Soak the rice in water and salt for about 2 hours. Drain it, then add the rice to a pot along with milk, dissolved saffron, and a little salt. Increase the heat so the milk is absorbed into the rice. Using milk creates a creamy texture and a softer taste.
Once the milk has completely evaporated, add the washed raisins. Let the rice steam over low heat until fully cooked and fluffy. Use a heat diffuser under the pot to prevent sticking.
Note: Make sure to drain excess water from the raisins before adding them.
Place a piece of walnut inside each date. In the final stage of cooking, arrange the dates on top of the rice and let everything steam together for a few minutes so the flavors blend. The dish is now ready to serve. You can garnish it with extra dates.
Use Medjool, Barhi, or Mazafati dates. These varieties have suitable size and do not break apart during cooking. Overly soft dates may lose their shape.
For a chicken variation, sauté diced chicken breast or boneless thighs with onion, turmeric, pepper, and a little cinnamon. Add it during the steaming stage for a richer dish suitable for gatherings.
Sauté ground meat with onion and spices such as cinnamon and turmeric. Once cooked, layer it with the rice for a more traditional, hearty flavor.
If raisins are not available, dried mulberries, figs, or chopped dried apricots can be used. Almonds or pistachios can replace walnuts.
Over-frying dates can make them bitter. Also, soaking rice for too long may cause it to become mushy during cooking.
