Fresh leeks: about 300 g
Eggs: 3
Flour: 1–2 tablespoons
Salt: 1 teaspoon
Black pepper: ½ teaspoon
Turmeric: ½ teaspoon
Garlic: 2 cloves (or 1 small onion)
Oil: as needed
Walnuts and barberries (optional, to taste)
Wash the leeks thoroughly and chop them finely.
Beat the eggs with the spices (turmeric, black pepper, and salt), then mix them with the chopped leeks.
If the mixture is too runny, add a little flour to help it hold together.
Add grated and drained garlic or a small grated onion to the mixture.
If available, add walnuts and barberries for extra flavor—they significantly enhance the taste of the kuku.
Heat oil in a pan, pour in the mixture, and fry until both sides are golden brown.
Serve as a whole cake or in bite-sized pieces with fresh bread.
