It is similar to a vegetable frittata or kuku, a family of Persian-style egg dishes. Made with spinach, fresh vegetables, eggs, and mozzarella cheese, this savory roll is packed with flavor and nutrients.

Ingredients

  • 300 g spinach

  • 3 egg whites

  • ½ cup mozzarella cheese

  • 1 clove fresh garlic

  • 1 onion

  • 1 red bell pepper

  • 1 medium carrot

  • 1½ tablespoons fresh chopped parsley

  • 1 whole egg

  • Salt and black pepper, to taste

  • Vegetable oil, as needed

How to Make Spinach and Cheese Roll

Step 1: Prepare the Spinach

If you are using frozen spinach, remove it from the freezer and allow it to thaw completely. If using fresh spinach, wash it thoroughly, remove any tough stems, and finely chop it.

Preheat the oven to 200°C (400°F). Properly preparing and draining the spinach is important because it helps give the finished roll a soft, delicate texture without excess moisture.

Step 2: Cook and Drain the Spinach

For frozen spinach, place it in a clean cotton towel and squeeze firmly to remove as much excess water as possible.

If using fresh spinach, sauté it in a pan with a little oil until softened. Then allow it to cool slightly and squeeze out any excess liquid.

Removing the extra moisture prevents the roll from becoming watery or falling apart during baking.

Step 3: Prepare the Spinach Layer

Place the well-drained spinach in a bowl. Add the 3 egg whites and mozzarella cheese, then season with salt and black pepper. Mix thoroughly until the ingredients are evenly combined.

Line a baking tray with parchment paper. Spread the spinach mixture evenly over the tray and smooth the surface with the back of a spoon until it is approximately 1.5 cm thick.

Place the tray in the preheated oven and bake for about 15 minutes, just until the spinach layer is partially set.

Step 4: Prepare the Vegetable Filling

Heat a little oil in a pan over medium heat. Add the chopped onion and sauté until golden.

Add the minced garlic and diced red bell pepper. Sauté for a few seconds until fragrant and slightly softened.

Transfer the sautéed vegetables to a bowl. Add the whole egg, season with salt and black pepper, and mix well.

Spread this vegetable-and-egg mixture evenly over the partially baked spinach layer.

Step 5: Roll and Finish Baking

Remove the tray from the oven and make sure the vegetable filling is spread evenly over the spinach layer.

Starting from one side, carefully roll the spinach layer into a firm cylinder. Take your time while rolling to prevent the layers from breaking.
