According to Saednews, Simple potato rice is a traditional, budget-friendly, and much-loved Iranian dish. It is made with everyday ingredients and cooked using the traditional one-pot rice method.

Ingredients

  • 2 cups rice

  • 1 large potato

  • 1 medium onion

  • Oil, as needed

  • Salt, as needed

  • Turmeric, as needed

  • 1 medium tomato

  • 1 tablespoon tomato paste

How to Make Simple Potato Rice

1. Prepare the Onion

Wash and peel the onion, then finely dice it. Add the onion to a medium-sized pot with some oil and sauté until it becomes soft and translucent.

2. Prepare the Tomato and Potato

While the onion is cooking, grate the tomato and cut the potato into small cubes.

3. Make the Tomato Mixture

Once the onion has softened, add the grated tomato and spices to the pot. This dish is traditionally best with a generous amount of turmeric. Sauté the mixture well until the tomato liquid evaporates and the mixture becomes thick and sauce-like.

4. Add the Tomato Paste

Add the tomato paste and sauté for a few minutes until it becomes fragrant and develops a deeper color.

5. Prepare the Rice

Meanwhile, clean and rinse the rice. Ideally, soak it in water with a little salt for about 30 minutes to 1 hour. This helps soften the grains and allows the rice to cook more evenly.

6. Cook the Rice and Potatoes

Once the onion, tomato, and tomato paste mixture is ready, add the rinsed rice, diced potatoes, and enough water to the pot. Increase the heat and bring the water to a boil.

Once boiling, reduce the heat to low and cover the pot. Let the rice cook and steam for approximately 50 minutes to 1 hour, until the rice is fully cooked and fluffy.

7. Serve

For a traditional presentation, you can turn the cooked potato rice onto a serving platter in a molded shape. Serve it with a variety of Persian pickles, such as eggplant-based Torshi Liteh or Torshi Haft Bijar.
