Ingredients for 4 Servings

  • Cake flour (3-zero flour): 1½ cups

  • Sugar: ½ cup

  • Eggs: 2

  • Vegetable oil: ¼ cup

  • Milk or water: ⅓ cup

  • Vanilla extract: ½ teaspoon

  • Baking powder: 1 tablespoon

  • Green and red gel food coloring: As needed

How to Make Watermelon Cupcakes

To prepare these colorful and delicious Yalda-style watermelon cupcakes, first choose a suitable bowl. Crack the eggs into the bowl and remove the white strands attached to the yolks to prevent the cake from developing an unpleasant egg smell.

Add sugar and vanilla to the eggs, then whisk with a hand whisk until the mixture becomes slightly foamy. Add the milk and vegetable oil, and mix again until well combined.

Sift the flour and baking powder together, then gradually sift them over the egg mixture. Using a spatula, gently fold the batter in circular motions in one direction until smooth. Divide the cake batter into three portions.

Add red food coloring to the largest portion of the batter and mix until the color is evenly distributed. Add green food coloring to another portion and mix until the batter turns green.

Select suitable cups or small molds and grease the inside lightly with oil. Place the green cake batter into a piping bag and pipe it into the cups.

Clean any excess green batter around the edges of the cups with a paper towel. Transfer the white batter into another piping bag. Pipe the white batter around the edges over the green layer, then fill the center.

Place the red batter into a piping bag and pipe it over the white layer. Clean the sides of the cups again if needed. Arrange the cups inside a suitable pot and pour boiling water into the pot until it reaches halfway up the sides of the cups.

Cover the pot lid with a cloth or kitchen towel, place the lid on the pot, and cook the cupcakes over low heat using a steaming method. After about 20 minutes, check the cakes by inserting a toothpick into the center.

If the toothpick comes out clean, turn off the heat and let the cupcakes rest in the hot water for another 10 minutes. Remove the cups from the pot, then gently loosen the edges of the cakes with the tip of a knife before serving.
