2 liters full-fat fresh milk
½ teaspoon cheese rennet
¼ cup lukewarm water
1–2 tablespoons salt
2–3 tablespoons green cumin seeds
1 teaspoon nigella seeds (optional)

Pour the milk into a saucepan and heat it gently until it reaches approximately 35–37°C (95–99°F). The milk should feel warm but should not come to a boil.
Dissolve the rennet in the lukewarm water and stir it into the warm milk. Mix gently for about one minute.
Cover the pot and place it in a warm location for 45–60 minutes, or until the milk has completely coagulated.
Using a clean knife, cut the curd into small cubes. Let it rest for 10 minutes to help the whey separate naturally.
