Traditional Persian Doogh Chicken Recipe

According to Saednews, Doogh chicken made with local doogh (a traditional Iranian yogurt drink, preferably slightly tangy) can be an excellent dish for lunch or dinner. There are different ways to prepare chicken, and recipes may vary depending on culture and local traditions. However, Doogh chicken is a very tasty and popular dish enjoyed across Iran. It is simple to prepare, and you can make it in a short time for yourself and your family.

As mentioned, the recipe is not complicated. This juicy and flavorful chicken is cooked in doogh. It is best to use chicken thighs, chicken breasts, or drumsticks. A combination of these cuts can also be used. This delicious dish is usually served with saffron rice. It is often garnished with herbs and various slivered nuts.

Ingredients

  • Chicken fillet or chicken breast: 600 g

  • Brewed saffron: ½ cup

  • Butter: 100 g

  • Doogh (slightly sour yogurt drink): 1 liter

  • Sliced almonds and pistachios (for garnish): as needed

How to Make Doogh Chicken (Step by Step)

Step 1

First, cut the chicken into smaller pieces. If using fillet, you can easily cut it at home. If using chicken breast, it is better to choose boneless breast for faster and better cooking.

Step 2

Wash the cut chicken pieces and place them in a strainer to remove excess water.

Step 3

Choose a suitable pan. Add 100 grams of butter and let it melt over low heat.

Step 4

Place the chicken pieces in the melted butter. Fry one side for about 10 minutes until golden, then turn them over and fry all sides. This step takes about 20 minutes in total. You may add turmeric and black pepper if desired.

Step 5

After the chicken is golden, reduce the heat.

Step 6

Transfer the fried chicken into a pot and place it over low heat.

Step 7

Add 1 liter of doogh to the pot. Do not cover the lid. Let it cook for about 20 minutes so the chicken absorbs the flavor. Then add the brewed saffron.

Step 8

Cook for another 40 minutes until the sauce thickens and the chicken is fully cooked and tender.

Step 9

Once ready, cook saffron rice separately. Serve the chicken and garnish with sliced pistachios and almonds. You can soak the nuts in water beforehand or lightly sauté them in butter for better flavor.

Important Tips for Perfect Doogh Chicken

  • You can serve it layered with saffron rice.

  • The best doogh is slightly sour and fizzy, but brand does not matter.

  • No additional salt is needed, as doogh already contains salt.

  • For extra aroma, add herbs like mint or fenugreek in the last 5 minutes of cooking.
