It is highly nutritious and can be enjoyed as a snack or even as a complete breakfast. This recipe explains how to prepare traditional Indian Gulab Jamun without using an oven.
The taste of Gulab Jamun is often compared to the Iranian dessert Bamieh, which is why it has many fans in different parts of Iran and beyond. Below is a step-by-step guide to preparing this sweet and rich dessert.
Milk powder: 1 cup
Flour: 3 tablespoons
Baking soda: as needed
Clarified butter (ghee): 1 teaspoon
Salt: as needed
Yogurt: 2 tablespoons
Saffron: as needed
Cardamom powder: 1 teaspoon
Sugar: 1.5 cups
Water: 2 cups

In a bowl, combine flour, milk powder, salt, and baking soda. To prevent lumps and ensure a smooth dough, sift the mixture three times to fully aerate it.
If milk powder is not available, you can replace it with regular milk.
Melt the ghee using a double boiler method. Add one tablespoon of it to the dry ingredients. Then add yogurt and mix well. Knead until the dough becomes soft and slightly sticky. Cover and let it rest for 5 minutes.
In a small pan, combine sugar and water. Heat and stir until the sugar fully dissolves (about 5–8 minutes), forming a light syrup.
Add cardamom powder and rose water to the syrup. Crush saffron and dissolve it in a little hot water or ice, then add it to the syrup for color and aroma.
Take small portions of dough and roll them into smooth, crack-free balls (about walnut size). Make sure all balls are uniform in size.
Heat oil in a deep pan over medium heat. Fry the dough balls until they turn golden brown. The oil should not be too hot; moderate heat works best to ensure even cooking.
Warm the syrup slightly and add the fried balls to it. Let them soak for about 2 hours so they absorb the syrup completely. After that, they are ready to serve.

Lightly oil your hands before shaping the dough to prevent sticking.
Make sure the balls have no cracks to avoid breaking during frying.
Keep the balls fully submerged in oil while frying for even cooking.
Do not overheat the oil; medium temperature is ideal.
Remove excess oil using a strainer or paper towels after frying.
Garnish with chopped nuts like pistachios, almonds, walnuts, or dried rose petals for extra flavor and decoration.
Gulab Jamun is a rich and comforting dessert with a soft texture and sweet syrupy taste. With a few simple ingredients and careful preparation, you can easily make this traditional Indian treat at home.
