SAEDNEWS: Barberry soup is a traditional and highly nutritious dish that, with its pleasantly sour and delightful taste, can be an excellent choice for lunch or as an appetizer.
According to Saednews, Barberry soup is a popular and delicious dish known for its pleasant sour flavor from barberries, aromatic spices, and high nutritional value. It can be served as a starter or as a main course, especially during cold seasons. It is also a great answer to the question, “What should I cook for lunch?”
Barberries are one of the most traditional and nutritious ingredients in Iranian cuisine. These small red berries are widely used in both savory dishes and desserts due to their sour taste and medicinal properties.
Some of the key benefits of barberries include:
Rich in vitamin C, which helps strengthen the immune system and prevent illnesses.
May help reduce cholesterol levels and lower blood pressure.
Contains antioxidants with anti-inflammatory and antimicrobial properties, making it suitable for soups that help with colds and flu.
In addition to its great taste, barberry soup is a healthy and nourishing meal for the whole family.

Barberries: 1/2 cup
Chicken (preferably breast): 200 g
Onion: 1 medium
Garlic: 2 cloves
Carrot: 1 medium
Potato: 1 medium
Tomato paste: 2 tablespoons
Turmeric: 1 teaspoon
Chicken or vegetable stock: 4 cups
Fresh parsley (chopped): 2 tablespoons
Salt and pepper: to taste
Cooking oil: 2 tablespoons
Vermicelli or soup noodles: 1 cup (optional)
Cut the chicken into small pieces and season it with salt, pepper, and turmeric. For better flavor, let it rest for 30 minutes in the refrigerator so the spices absorb well. Finely chop the onion and garlic. Dice the carrot and potato into small cubes.
Heat oil in a pot and sauté the chopped onion until soft and golden. Add garlic and sauté for another 1–2 minutes until fragrant. Add the chicken pieces and cook until they change color.
Add tomato paste and stir well to remove its raw taste and coat all ingredients evenly.
Add diced carrots and potatoes to the pot and sauté briefly. Then pour in the chicken or vegetable stock. Cover the pot and let it simmer for about 30 minutes until the vegetables become tender and flavors blend together.
Wash the barberries thoroughly and soak them in cold water for a few minutes to soften. Add them to the soup and let it cook for another 10 minutes so they release their sour flavor into the broth.
Add chopped fresh parsley at the end. If you prefer a thicker soup, you can add vermicelli or soup noodles and cook for another 5–7 minutes.

Your barberry soup is ready. Serve it hot in bowls and garnish with fresh parsley and barberries. It pairs perfectly with fresh bread.
Wash barberries carefully to remove any dirt and soak them briefly in cold water.
Use fresh, high-quality chicken for better flavor and texture.
Adjust the amount of barberries depending on how sour you like the soup.
Spices like turmeric and black pepper enhance both flavor and color. Optional spices like cinnamon or cumin can add a unique taste.
