You can adjust the quantities for more or fewer servings by simple proportioning.
Ingredients | Amount |
|---|---|
Rice | 2 cups |
Ground beef | 250 g |
Sliced cheese | 4 slices |
Onion | 1 |
Sesame seeds | 1 tsp |
Black seeds | 1 tsp |
Balsamic vinegar or soy sauce | 1 tbsp |
Basil | as needed |
Cooking oil | 1 tbsp |
Ingredients | Amount |
|---|---|
Mustard sauce | 1 tbsp |
Mayonnaise | 2 tbsp |
Onion | 1/4 medium onion |
Fresh lemon juice | 1/2 lemon |
Salt | as needed |
Black pepper | as needed |

The total preparation time is about 1 hour: 30 minutes for preparation and 30 minutes for cooking.
Soak the rice for 1 hour. Then cook it as a “kateh” (Persian-style rice). Add water so that it is about one finger above the rice level. Add salt and oil, and let it cook over low heat until the water is absorbed.
Once the water has evaporated, cover the pot and let the rice steam for 30 minutes. Then set it aside to cool to room temperature.
Mix the cooled rice with sesame seeds, black seeds, 1 tablespoon of oil, and 2 tablespoons of cold water. Shape the mixture using a round cutter or a bowl. Press the rice firmly so it becomes compact and holds together.
Remove the rice patty from the mold and dip both sides into soy sauce or balsamic vinegar. Lightly fry both sides in a pan with a little oil.
Slice the onion and sauté it in a pan with a little oil. After about one minute, divide it into four sections in the pan.
Form four small ground beef patties and place them on the onions. Flatten them slightly with a spoon. The patties should be slightly larger than a walnut. Fry both sides well. Place a slice of cheese on each patty so it melts.
To prepare the sauce, mix mayonnaise and mustard with lemon juice. Add salt, pepper, and finely chopped onion.
Assemble the burger: spread sauce on a rice bun, add basil leaves, then place the beef patty with melted cheese on top. Cover with another rice bun and press gently. Repeat for all servings.
