They are usually light meals served for dinner and are suitable for people on diets or those who prefer low-calorie, light foods.

Chicken stew is one of the most delicious dishes and is commonly served in Iranian households. It is considered a quick meal. There are different ways to prepare chicken stew. In this article, we introduce a simple and tasty chicken and mushroom stew recipe that is very easy to make and can be prepared in a short time.

Ingredients

  • Chicken breast: half of one piece

  • Mushrooms: 250 g

  • Medium carrots: 2

  • Onion: 1

  • Garlic: 2 cloves

  • Salt, black pepper, turmeric: as needed

  • Milk: 1/4 cup

  • Oil: as needed

  • French fries: 1 bowl


Instructions

First, cut the chicken breast into small cubes and set it aside.

Peel and finely chop the onion, then sauté it in a pan with some oil until it becomes soft and translucent.

Add grated garlic and after about 30 seconds, add the chopped chicken.

Add turmeric, salt, and black pepper, and sauté for one to two minutes.

Peel the carrots and cut them into thin strips, then add them to the pan and stir.

Finally, add sliced mushrooms to the mixture.

Cover the pan, reduce the heat, and let it cook for about 30 minutes so the chicken and carrots cook in the mushroom juices and become tender.

Next, add the milk and stir well. Let it cook for another 10 minutes, then remove from heat and serve in a dish.

Top with fried potatoes and serve.


Notes

You can use plain or thin-cut chips instead of French fries. For a nicer presentation, it is better to cut the potatoes into cubes before frying.

Mushrooms are nutritious and contain protein, vitamins, minerals, amino acids, fiber, copper, iron, antioxidants, and more. They are known to help support the immune system. When buying mushrooms, note that fresh mushrooms are not necessarily bright white. A good mushroom should feel slightly heavy; very light ones may not be fresh. The cap should not have cracks, and mushrooms with brown spots should be avoided unless fully cooked.

For this recipe, it is better to use small button mushrooms and add them whole to the dish.
