SAEDNEWS: Gajar ka halwa is a rich, comforting dessert made with carrots, milk, sugar, and ghee. It’s especially popular during winter and festive occasions across India and neighboring regions.
According to Saednews:

🍽️ Serves: 4–6
6–7 medium red carrots (or regular carrots), grated
4 cups full-fat milk
4–6 tbsp ghee (clarified butter)
½ to ¾ cup sugar (adjust to taste)
4–5 green cardamom pods (or ½ tsp cardamom powder)
10–12 cashews, chopped
10–12 almonds, sliced
1 tbsp raisins
Optional: 2 tbsp khoya/mawa (for richer taste)



Wash, peel, and finely grate the carrots.
In a heavy-bottom pan, add grated carrots and milk.
Cook on medium heat, stirring occasionally, until the milk reduces and is mostly absorbed (about 25–30 minutes).




Once the mixture thickens, add ghee.
Stir continuously and cook until the mixture becomes glossy and the raw smell disappears.
Add sugar and cardamom.
The mixture will become slightly watery again—cook until it thickens.
Add cashews, almonds, and raisins. Mix well and cook for another 5–10 minutes.
For richer taste, add khoya and cook for 2–3 more minutes.
Serve hot or warm. Traditionally enjoyed plain, or with a scoop of vanilla ice cream.
