Ingredients

  • Spinach: 300 g

Instructions

If you are using frozen spinach, remove it from the freezer and let it thaw completely. If using fresh spinach, wash it thoroughly and chop it finely. Preheat the oven to 200°C.

If using frozen spinach, place it in a clean cotton cloth and squeeze out all excess water. If using fresh spinach, sauté it in a pan with a little oil until softened, then drain any remaining liquid. Removing moisture is essential to keep the roll firm and prevent it from falling apart.

Place the drained spinach in a bowl, then add 3 egg whites and mozzarella cheese. Season with salt and black pepper and mix well until fully combined.

Line a baking tray with parchment paper, spread the spinach mixture evenly, and flatten it to about 1.5 cm thickness. Bake for 15 minutes until partially set.

In a pan, heat a little oil and sauté the chopped onion until golden. Add garlic and red bell pepper and cook briefly until fragrant. Add grated carrot and stir for a short time.

Transfer the sautéed vegetables to a bowl, add one whole egg, season with salt and pepper, and mix well.

Spread this mixture evenly over the partially baked spinach layer in the tray.

Carefully roll the spinach layer from one side into a tight log shape. Return it to the oven and bake for another 25 minutes until fully cooked.
