Parfait is a delicious and popular dessert. Although it may not be as easy to prepare as some other desserts, its wonderful flavor inspires many people to make it at home. It is a dessert that most of your guests are likely to enjoy, and you can prepare it in a variety of flavors, including chocolate, vanilla, coconut, banana, caramel, coffee, and more.
400 g whipped cream
5 sheets of gelatin
½ teaspoon vanilla
150 g milk and an additional 250 g milk
100 g caramel syrup
Place the gelatin sheets in a bowl filled with cold water and let them soak until completely softened. Remove them from the water and transfer them to a bowl, preferably made of stainless steel.
Add a very small amount of boiling water, then place the bowl over the steam of a samovar or kettle. Allow the gelatin to melt completely using the double-boiler method.
Heat the milk with a very small amount of water over high heat until it begins to boil. Add the caramel sauce and vanilla to the boiling milk. Once the mixture has boiled and become smooth, strain it through a sieve.
Place the gelatin mixture in the refrigerator until it begins to set slightly.
Then combine the caramel mixture with the whipped cream and pour everything into your desired mold.
Refrigerate for 1–2 hours until set. Remove from the refrigerator, decorate as desired, and serve.

65 g sugar, for making caramel
160 ml boiling water
3 egg yolks
1 pinch of vanilla
250 g milk
300 g whipped cream
50 g sugar, for the egg yolks
Step 1: Make the Caramel
Pour the sugar into a milk warmer or small saucepan and place it over the heat until it caramelizes.
Do not stir the sugar with a spoon. Instead, gently swirl the pan to help the sugar caramelize evenly.
Once the sugar has caramelized, remove it from the heat and carefully add the boiling water.
Return the pan to the heat and continue swirling it regularly without using a spoon. Allow some of the water to evaporate until the mixture becomes slightly thicker.
Remove it from the heat. The caramel mixture will not become completely solid; its volume will simply decrease as the water evaporates.
Step 2: Prepare the Egg Mixture
Beat the egg yolks, vanilla, and 50 g of sugar together using an electric mixer.
While mixing, gradually add the heated milk in several batches.
Continue beating with an electric mixer for approximately 3 minutes.

Step 3: Add the Caramel
Add the prepared caramel mixture to the milk and egg mixture. Stir gently with a spoon to combine.
Cool the mixture over ice or set it aside until it is no longer hot.
Step 4: Combine with the Whipped Cream
Once the mixture has cooled, add it to the whipped cream and beat until smooth and well combined.
Step 5: Freeze the Ice Cream
Pour the mixture into a metal container with a lid, or cover it tightly with plastic wrap.
Place it in the freezer for 12 hours before serving.
For alternative flavors, you can replace the caramel with different fruits and omit the sugar-water mixture.
Caramel parfait and homemade caramel ice cream are excellent choices for parties, family gatherings, and special occasions. You can garnish the parfait with caramel sauce, chocolate shavings, or chopped nuts for an attractive presentation.
For a variation, experiment with flavors such as chocolate, banana, coconut, coffee, or fresh fruit to create a dessert suited to your taste.
