According to Saednews, One of the most delicious traditional dishes that Iranians enjoy on New Year’s Eve or the first day of Nowruz, when the whole family gathers around the table, is Sabzi Polo Mahi (herbed rice with fish).

The herbs used in this dish are a combination of dill, cilantro, parsley, leeks, fenugreek, and mint. They are finely chopped, mixed with rice, and steamed together. Traditionally, the fish is either fried or coated and fried until crisp.

  • Clean the fish thoroughly to prevent any unpleasant fishy odor.

  • Avoid overcooking the fish, as this can dry out the flesh and diminish its flavor.

  • Do not use more spices than necessary. Too many herbs and spices can overpower the natural flavor of the fish.

  • Keep the fish moist while cooking. The flavorful juices left in the cooking dish can be turned into a delicious sauce.

Bake It in the Oven

Baking fish at a moderate temperature of 180–200°C (350–400°F) is a healthy and practical way to cook a whole fish. However, keep in mind that baking is a relatively dry cooking method, and fish without its skin can lose moisture.

For this reason, use the fish's natural juices or a sauce while baking. You can marinate the fish before placing it in the oven, or stuff it with herbs and other ingredients.

Wrap It in Foil

Foil is an excellent way to preserve the flavor and moisture of fish, especially whole fish or fish steaks.

Drizzle the fish with lemon juice and add a little butter, salt, pepper, herbs, and spices according to your taste. Wrap it tightly in foil and bake at 180–200°C (350–400°F) until the fish remains tender and juicy.

Grill It

Fish can be filleted and grilled, but it should be kept moist with lemon juice, oil, a suitable sauce, or butter.

Brush the ingredients over the fish or wrap it in foil, then grill it while turning it several times. Grilled fish does not always have to be dry. You can also serve it with a traditional Persian Do Piazeh fish sauce for a different flavor.

Poach It

Place the fish in a pot, add a small amount of water, and add a few cloves of garlic. Cook over medium heat.

Fry It

There are two main ways to fry fish: with a small amount of oil or with plenty of oil.

For shallow frying, you only need enough oil to cover part of the thickness of the fish. One of the best fats for frying fish is a combination of butter and olive oil. Mixing oil with butter helps prevent the butter from burning at higher temperatures.

How to Properly Deep-Fry Fish

If you want to deep-fry a whole fish or fillet, it is best to coat it with a layer of egg and breadcrumbs or another suitable coating.

The oil should reach 175–195°C (350–385°F) before adding the fish. If the oil is not hot enough, the coating will absorb too much oil and become greasy and unattractive. If the temperature is too high, the outside may burn before the inside is fully cooked.

The fish is ready when it turns golden brown, rises to the surface of the oil, and begins to bubble around the edges.

If you prefer not to fry the fish whole, you can also use it to make delicious fish patties.

Turn It Into a Stew

Fish can easily be turned into a flavorful stew or one-pot dish. Cut the fish into pieces and cook it with water and herbs or use it as the main ingredient in a soup.

With this method, reduce or turn off the heat before the cooking liquid reaches a vigorous boil. The fish is ready when its flesh separates easily from the bones.

This technique works particularly well with meaty fish. Ghormeh Mahi (Persian fish stew) is one example of cooking fish as a stew.
