SAEDNEWS: Dopiazeh Aloo is considered one of Iran’s traditional dishes. This flavorful meal originates from Shiraz, and below, you’ll learn how to prepare it using two different methods.
According to Saednews, Do Piazeh Aloo is a quick and easy Persian dish that can be prepared with just a few simple ingredients. Served with bread, it makes a satisfying and comforting meal. Despite its name, this dish does not contain plums. In the Shirazi dialect, “Aloo” refers to potatoes.
This traditional Shirazi recipe is made primarily with potatoes and onions and can be prepared in several different ways. Here are two popular methods for making this simple and flavorful dish at home.
2 medium potatoes
2 medium onions
1 tablespoon tomato paste
Salt, black pepper, and turmeric, as needed
Oil, as needed
Wash the potatoes thoroughly and place them in a pot with enough water to cover them. Boil until they become tender.
Once cooked, allow the potatoes to cool slightly, peel them, and cut them into small cubes.
Next, prepare the onions. Peel and wash them, then slice or finely dice them according to your preference. Heat some oil in a pan and sauté the onions until they begin to turn golden. Add turmeric and black pepper while they are cooking.
Once the onions are golden, add the tomato paste. Stir and cook it briefly to remove its raw taste and deepen its color and flavor.
Add the cubed potatoes and season with salt. Gently sauté everything together until the potatoes become slightly golden and are well combined with the onions and tomato paste.
Transfer the Do Piazeh Aloo to a serving dish and garnish with fresh or dried parsley or mint. Serve warm with bread. Pickles or torshi can also be served alongside it.

There is more than one way to prepare authentic Shirazi Do Piazeh Aloo. Another popular version uses mashed potatoes and does not require tomato paste.
4 medium potatoes
2 medium onions
Salt, black pepper, and turmeric, as needed
Oil, as needed
Wash the potatoes and boil them in a pot of water until completely tender. Once cooked, peel them and mash them with a potato masher or food processor until smooth.
Peel and wash the onions, then slice them. Heat some oil in a frying pan and sauté the onions. Once they begin to soften, add salt, black pepper, and turmeric. Continue cooking until the onions are thoroughly fried and golden.
Add the mashed potatoes to the pan and gently sauté everything together until the potatoes and onions are evenly combined.
Your Do Piazeh Aloo is now ready to serve. Garnish with fresh or dried herbs and enjoy it with warm bread.

You can adjust this traditional dish according to your taste and preferred texture:
Tomato paste is optional and can be left out.
Instead of cubing the potatoes, you can grate or mash them.
If you prefer crispy potatoes, cut them into cubes and fry them separately before adding them to the dish.
Ground meat or mushrooms can be added for extra flavor and substance.
For a spicier version, add red pepper along with the black pepper.
A small amount of saffron can add both color and flavor.
Some versions include one egg toward the end of cooking. Crack the egg into the pan and stir it into the potato and onion mixture until cooked.

Do Piazeh Aloo is a versatile Shirazi comfort food that comes together quickly and requires only a handful of everyday ingredients. Whether prepared with cubed potatoes and tomato paste or with creamy mashed potatoes, it is best served hot alongside fresh bread.
