How to Make Homemade Chicken and Mushroom Meatballs

Ingredients

  • 500 g chicken breast

  • Salt and black pepper, to taste

  • 30 g fresh parsley, chopped

  • 6 tablespoons wheat flour

  • 1 egg

  • 10–12 mushrooms

  • 1 tablespoon fresh lemon juice

  • 3 tablespoons melted butter

  • Vegetable oil, as needed

  • 2 tablespoons tomato paste

  • ½ chicken bouillon cube mixed with 2 liters of water

How to Make Chicken and Mushroom Kofta

  1. Season the chicken breast with salt and black pepper. Place it in a pot with water and cook for 45 minutes.

  2. Once the chicken is completely cooked, shred or finely chop it.

  3. Place the chicken, chopped parsley, and half of the flour in a bowl. Mix everything thoroughly by hand.

  4. Add the egg to the mixture and combine well. Refrigerate the mixture for 30 minutes.

  5. Combine the mushrooms with the fresh lemon juice and place them in a pan over high heat.

  6. Add the butter and vegetable oil to the pan. Continue sautéing until all the liquid released by the mushrooms has evaporated.

  7. In another pot, heat a little oil and sauté the tomato paste. Add the chicken broth and bring the liquid to a boil.

  8. Remove the chicken mixture from the refrigerator and shape it into small kofta balls.

  9. Coat each kofta in flour, then carefully place them into the pot of boiling broth.

  10. Cook the kofta uncovered for 10 minutes, then cover the pot and continue cooking for another 30 minutes.

  11. Add the sautéed mushrooms to the pot and cook for another 5 minutes.

  12. Your chicken and mushroom kofta is now ready to serve. Serve the kofta together with the flavorful broth.
