How to Make Sesame Chicken Noodles with Spinach

Ingredients

For the Chicken and Noodles

  • 4 chicken thighs

  • 1 liter water

  • 2 tablespoons fresh chopped ginger

  • 1 onion, quartered

  • 1 carrot, chopped

  • 400 g noodles

  • 80 g baby spinach leaves

  • 2 cucumbers, grated

  • 2 spring onions, finely sliced

  • 1 tablespoon toasted sesame seeds

For the Sesame Sauce

  • 100 g toasted sesame seeds

  • 2 tablespoons sugar

  • 1 tablespoon wasabi powder

  • 1 tablespoon miso paste

  • 2 tablespoons mirin

  • 2 tablespoons soy sauce

  • 4 tablespoons water

Method

  1. Place the chicken thighs, water, ginger, onion, and carrot in a large pot. Bring to a boil over medium heat.

  2. Reduce the heat and simmer gently for about 30 minutes.

  3. Remove the pot from the heat and set it aside to cool.

  4. For the sauce, crush the toasted sesame seeds in a mortar and pestle until they form a smooth paste. Add the sugar, wasabi powder, miso paste, mirin, soy sauce, and water, then mix and pound until well combined. You can also use a food processor, although the flavor and texture may differ slightly from the traditional mortar-and-pestle method.

  5. Remove the chicken from the broth and use a fork to separate the meat from the bones.

  6. Remove the vegetables from the broth and set them aside. They can be puréed and saved for later use in soups.

  7. Cook the noodles according to the package instructions.

  8. Combine the shredded chicken, cooked noodles, baby spinach, and grated cucumber in a large bowl. Add three-quarters of the sesame sauce and toss until everything is evenly coated.

  9. Top with sliced spring onions and toasted sesame seeds. Serve and enjoy.
