According to Saednews, Vegetable pizza is one of the most popular varieties of pizza, alongside favorites such as mushroom and meat pizza and pepperoni pizza. It is an excellent choice for vegetarians and anyone who prefers to avoid meat, while still being flavorful and satisfying. If you have never tried making this simple vegetable pizza, follow this recipe for a delicious homemade version.
3 cups chopped yellow summer squash or zucchini
2 red or yellow sweet peppers, cut into wide strips
1 large sweet onion or fennel bulb, sliced
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 ounces Parmesan cheese
1 sheet pizza dough or Danish pastry dough
1/2 cup small tomatoes, halved
2 tablespoons balsamic vinegar
1 tablespoon chopped fresh thyme
1 cup chilled Parmesan cream sauce
1/4 cup finely chopped sweet onion

Preheat the oven to 450°F (230°C).
Place the zucchini, sweet peppers, and onion in a 9 × 13-inch baking dish. Spread the vegetables evenly. Add the olive oil, salt, and black pepper, then roast for 20–25 minutes, stirring once, until the vegetables are tender.
Using a vegetable peeler, shave the Parmesan cheese into thin strips and set aside.
On a lightly floured surface, roll out the dough into a 9 × 13-inch rectangle. Remove the vegetables from the oven and add the tomatoes. Toss the vegetables with the balsamic vinegar and half of the Parmesan cheese.
Spread the vegetable mixture evenly in the baking dish. Carefully place the rolled-out dough over the vegetables and tuck the edges around the sides.
Return the dish to the oven and bake for approximately 15 minutes, or until the dough has puffed up and turned golden brown.
Remove the pizza from the oven and let it cool for 5 minutes. Place a larger serving dish over the baking dish and carefully turn them over to transfer the pizza. Make sure any vegetables stuck to the dough are transferred as well.
Sprinkle the remaining Parmesan cheese and 2 teaspoons of fresh thyme over the pizza.

In a small bowl, combine the Parmesan cream sauce, chopped onion, and the remaining 1 teaspoon of thyme. Stir well.
Cut the pizza into squares and serve warm or at room temperature with the sauce.
