SAEDNEWS: Stovetop raisin cookies without an oven are a simple and quick solution for those who enjoy homemade sweets. With minimal equipment, you can prepare a treat that is both delicious and nutritious.
According to Saednews, Baking cookies at home is one of the most enjoyable parts of cooking, but many people avoid it because they do not have an oven. The good news is that you can make delicious and nutritious treats like pan-fried raisin cookies using a simple frying pan and a few useful techniques.
These cookies do not require an oven or an electric mixer and can be prepared with basic ingredients that are usually available at home. Raisins add a natural sweetness and nutritional value, making these cookies a perfect choice for an afternoon snack or a casual gathering. In this article, we will guide you step by step through the preparation process and share important tips for achieving perfectly baked cookies.
All-purpose flour (sifted): 1 cup (about 140 g)
Egg: 1
Vegetable oil (preferably canola or sunflower oil): ⅓ cup (about 75 ml)
Powdered sugar: ⅔ cup (about 90 g)
Raisins or currants: ½ cup (about 70 g)
Vanilla: a small pinch (about ¼ teaspoon)
Baking powder: 1 teaspoon
Tip: You can replace raisins with dates or dried mulberries. For extra flavor, adding a little cinnamon or grated orange zest is also recommended.

Crack the egg into a large bowl and add vanilla and powdered sugar. Using a fork or a hand whisk, beat the mixture for 2–3 minutes until it becomes smooth, slightly fluffy, and creamy in color. This step helps create a softer cookie texture.
Add the vegetable oil to the egg and sugar mixture, then mix again until everything is fully combined. At this stage, the mixture should become smooth and glossy.
If you use melted butter instead of oil, the cookies will have a richer flavor, while vegetable oil creates a lighter texture.
Sift the flour and baking powder together, then gradually add them to the wet ingredients. Mix gently with a spatula or wooden spoon using a folding motion, only until the flour is absorbed.
Important: Do not overmix the dough, as activating too much gluten will make the cookies hard and dense.
Add the raisins to the dough and gently mix with your hands or a spoon until they are evenly distributed.
If the raisins are dry, soak them in warm water for 10 minutes beforehand, then drain them. This will make them softer and plumper.
Lightly grease a non-stick frying pan or line it with parchment paper. Using a piping bag or a spoon, place small round portions of dough into the pan, leaving about 2 cm of space between each cookie.
If the dough is too soft, simply spoon it directly into the pan and shape the cookies.
Place the pan over a heat diffuser or cook directly on very low heat. Cover the pan with a lid and allow the cookies to cook for 15–20 minutes until the bottoms become golden.
Then flip the cookies and cook for another 5 minutes with the lid open until the tops become slightly golden as well.
Tip: If you are using a removable-handle cooking pan, remove the plastic sealing ring from the lid or use a regular pan so the lid closes properly and keeps the heat and steam inside.

Use even heat: Always use a heat diffuser to prevent burning and ensure even cooking.
Cookie thickness: Do not make the cookies too thick (around 2 cm in diameter is ideal), otherwise the center may remain undercooked.
Check doneness: Insert a toothpick into a cookie; if it comes out clean, the cookies are ready.
Cooling time: Leave the cookies in the pan for 5 minutes before moving them so they can firm up, then transfer them to a cooling rack.
Storage: Keep the cookies in an airtight container at room temperature for up to one week. For extra crispness, place a small piece of apple or bread inside the container.
