Spinach Dishes: How to Prepare Different Simple and Delicious Recipes with Spinach

According to Saednews, Spinach is a popular ingredient in a wide range of traditional Iranian and international cuisines due to its mild flavor and exceptional nutritional value. In authentic Iranian cooking, this nutritious vegetable is used in delicious dishes such as Alu Esfenaj (spinach and plum stew), popular appetizers like Borani Esfenaj (spinach mixed with yogurt and garlic), and simple yet nourishing meals such as Nargesi (spinach with eggs) and spinach kuku.

Beyond Iranian cuisine, spinach also plays an important role in international cooking. It is widely used in various types of pasta, lasagna, pies such as spinach quiche, soups, and fresh diet-friendly salads. This incredible variety highlights the flexibility of spinach and its ability to combine beautifully with different ingredients.

Homemade Spinach Borek

To prepare spinach borek with homemade dough, first combine flour and salt, then gradually add water until a soft dough forms. Knead the dough for about 5 minutes until it becomes smooth and elastic, then divide it into 10 equal portions.

Roll out each portion and brush the layers with a mixture of melted butter and vegetable oil. Place the layers together and let the dough rest for 30 minutes.

Meanwhile, sauté chopped spinach with onion and spices. After resting, flatten each dough piece with your hands on an oiled surface until thin. Place the spinach filling along one edge, roll it, and arrange it in a baking tray.

Brush the boreks with oil, sprinkle sesame seeds on top, and bake in a preheated oven at 190°C (374°F) for about 45 minutes until golden. If needed, turn on the grill function for a few minutes to brown the surface.

(You can also use ready-made yufka pastry instead of homemade dough.)

Spinach Quiche

To prepare this delicious and unique spinach dish, grate the potatoes finely and squeeze out all excess water. Season with salt and pepper, then spread evenly in a buttered baking dish, pressing the mixture up the sides to form a crust.

Bake for about 15–20 minutes until the potato crust becomes golden.

Meanwhile, sauté spinach with garlic and add fried onions. Mix cream cheese or labneh with milk and eggs, then combine it with the spinach mixture.

Pour the filling into the potato crust and arrange cherry tomatoes on top. Return the dish to the oven until fully cooked. During the final minutes, use the grill function to create a golden and attractive surface.

Spinach Nargesi (Spinach and Eggs)

Spinach Nargesi is a simple, healthy, and suitable meal for dinner.

First, clean and wash the spinach, then place it in a covered pot over low heat for about 15 minutes until it softens with its own moisture.

Meanwhile, sauté sliced onions in a pan with a little oil until softened. Add chopped garlic and cook until fragrant.

Add the cooked spinach to the pan, sauté briefly, and season with salt and pepper. Finally, crack eggs over the spinach mixture and allow them to cook.

Once the eggs are set, serve the spinach Nargesi warm.

Spinach and Mushroom Omelette

To make spinach and mushroom omelette, heat a pan with a little oil.

Add chopped onion and garlic and sauté until soft and aromatic. Add sliced mushrooms and cook for a few more minutes.

Add chopped spinach along with salt, pepper, and paprika. Allow the mixture to cook for about 5 minutes.

Finally, pour beaten eggs over the vegetables, cover the pan, and cook until the eggs are fully set.

Spinach Crepes

For spinach crepes, blend eggs and egg whites (or two whole eggs), spinach, water, rolled oats, salt, and pepper until smooth.

Heat a non-stick pan and pour a ladle of the mixture into it. When bubbles appear on the surface, loosen the edges and flip the crepe to cook the other side.

These healthy crepes can be served with cheese and walnuts or cheese with cucumber and tomatoes.

They are a nutritious alternative to bread, a suitable snack for dieting, and an excellent protein-rich breakfast option for athletes.

Spinach and Potato Dish

This dish is an excellent choice for a light and nutritious dinner. It is especially useful because spinach contains many health benefits and can be served in a delicious way that children may also enjoy.

First, sauté diced onions until softened. Add grated garlic and chopped spinach, then cook until all the spinach moisture evaporates.

After turning off the heat, allow the mixture to cool slightly and remove any remaining liquid.

Combine the spinach and onions with boiled potatoes, eggs, tempura powder or breadcrumbs, and spices until a smooth mixture forms.

Shape portions of the mixture with your hands and lightly fry them in oil until golden.

This dish is flavorful, filling, and a smart way to include spinach in your evening meals.

Chicken and Spinach Panini

To prepare this delicious and nutritious sandwich, first cook chicken breasts and shred them.

Cook spinach until all excess moisture disappears, then chop or blend it until smooth.

Sauté chopped mushrooms until their water evaporates and they become golden.

Fry onions, add bell peppers, and once softened, add mushrooms, chicken, salt, pepper, thyme, and a little tomato sauce. Mix well.

Keep the spinach separate.

Spread tomato sauce on toasted bread, add a layer of chicken mixture, a layer of spinach, and then Gouda cheese. Place another slice of bread on top.

Spread a little butter on the outside and cook in a panini maker or double-sided pan until the cheese melts and the bread becomes golden.

This sandwich is ready in 2–3 minutes, and adding a little garlic to the spinach improves its flavor.

Alu Esfenaj (Spinach and Plum Stew)

Alu Esfenaj is one of the most traditional and flavorful Iranian stews. It can be prepared with either chicken or red meat.

For six servings, sauté chopped onions until golden. Add spices and allow their aroma to develop.

Add chicken pieces or meat cubes and lightly fry them.

Separately sauté cleaned spinach until all excess water disappears and the spinach becomes well cooked. Add it to the pot.

Then add plums, pomegranate paste, and salt. Allow the stew to cook slowly until it becomes thick and flavorful.

This elegant dish offers a pleasant balance of mild and slightly sour flavors.

Spinach Tahchin (Persian Layered Rice with Spinach and Chicken)

To prepare spinach tahchin with chicken, first sauté chopped chicken breast with salt, turmeric, and ginger powder. Set aside.

Fry chopped onions until golden, then add chopped spinach and half a grated garlic clove. Cook for about 5 minutes and turn off the heat.

Cook and drain the rice, keeping it slightly firmer than usual so it maintains its texture when mixed and pressed.

In a bowl, combine egg yolks, yogurt, salt, brewed saffron, and oil. Mix well, then add the drained rice and combine thoroughly.

Grease the bottom and sides of a non-stick pot with oil. Add half of the rice mixture and press firmly.

Add a layer of spinach followed by the sautéed chicken. Cover with the remaining rice, press it down, and smooth the surface.

Make a few holes in the rice and place small pieces of butter on top.

Cover the pot with a steam diffuser and cook over medium-low heat for about 5 minutes. Then reduce the heat to very low and allow the tahchin to steam for approximately 2 hours until the bottom becomes golden and delicious.
