It can have a special place as a snack, at gatherings, or during Ramadan iftar because, in addition to its delicious taste, it provides energy and calcium to help restore the body’s strength after fasting.

Ingredients for Milk and Rice Flour Ferni

  • 4 cups milk

  • 4 tablespoons rice flour

  • 4 tablespoons rose water

  • 6 tablespoons sugar

  • Saffron water, as needed

  • Ground cardamom, as needed

  • Ground cinnamon, as needed

How to Make Ferni with Milk and Rice Flour

First, sift the rice flour well to remove any lumps. This step helps create a smooth and creamy texture. Add the sifted rice flour to a suitable saucepan.

Gradually add cold milk to the flour. Stir continuously until the flour completely dissolves in the milk and no lumps remain. This method ensures that the final Ferni is smooth, silky, and evenly textured.

Do not skip sifting the rice flour, as it prevents the dessert from becoming lumpy. Adding the milk slowly while stirring constantly is the key to making a high-quality, lump-free Ferni.

Place the saucepan over low heat. Avoid using high heat, as it can cause the Ferni to stick to the bottom of the pan or develop lumps.

Continue stirring the mixture gently and regularly. This prevents the Ferni from overflowing or burning and gives it a soft, creamy consistency. If milk is not available, this dessert can also be prepared using other suitable alternatives.

For the best results, use a wooden or silicone spoon for stirring.

After about 10 to 15 minutes of cooking, when the Ferni begins to thicken slightly, add sugar according to your preferred sweetness. If you want to replace sugar with honey based on your taste or diet, add it at the end of cooking after the Ferni has cooled slightly to preserve its natural benefits.
