The following ingredients are enough to prepare cheese kunafa for 4 people. You can adjust the quantities depending on the number of servings you need.
300 grams Turkish kadaif (kunafa pastry) noodles
200 grams mascarpone cheese
200 grams heavy cream
150 grams butter
Ground pistachios as desired
2 cups sugar
Brewed saffron as needed
Cinnamon as desired
Cardamom or rose water as desired
Step-by-Step Method for Making Cheese Kunafa

Before making the kunafa, it is better to prepare the special syrup first.
Pour water into a suitable saucepan until it is about halfway full and bring it to a boil.
Once the water starts boiling, add the sugar and stir continuously until it completely dissolves.
After the sugar has dissolved, add the brewed saffron. Let the syrup simmer over low heat for at least 30 minutes until it reaches the right thickness.
The syrup should become thick and have a honey-like consistency. Once it reaches this stage, turn off the heat. If you like, you can add a little cardamom or rose water to give the syrup a wonderful aroma.

Separate the kadaif noodles with your hands and gently break them into smaller pieces.
Melt the butter using indirect heat and pour it over the kadaif noodles.
Add 2 tablespoons of thick brewed saffron and mix well. Make sure all the kadaif strands are fully coated with butter so they absorb the flavor.
For baking kunafa, it is best to use a glass baking dish. Grease the bottom and sides of the dish well with butter to prevent sticking. Add a small amount of saffron to the bottom of the dish for extra flavor and color.
Place half of the butter-coated kadaif noodles in the dish and press them firmly with a spatula or spoon until the surface becomes smooth and even.
In a separate bowl, mix mascarpone cheese with heavy cream and stir well until the mixture becomes smooth and creamy. You can also use cream cheese or labneh instead of mascarpone if preferred.
Spread the cheese and cream mixture evenly over the kadaif layer. If desired, you can add a small amount of shredded mozzarella cheese on top.
Add the remaining kadaif noodles over the cheese layer and press gently until the surface is smooth and even.
Preheat the oven to 160°C (320°F). After the oven is heated, place the kunafa on the middle rack and bake for about 30 minutes.
Check the kunafa after 30 minutes. If the top has turned golden brown, remove it from the oven. Otherwise, allow it to bake for a few more minutes.
Immediately after taking the kunafa out of the oven, pour the prepared syrup over it and allow it to soak in completely.
Finally, decorate the kunafa with ground pistachios or dried rose petals. Serve it warm with ice cream or tea.
