This dish belongs to the family of Iranian-style kuku (vegetable-based omelet dishes). Since it is prepared with spinach, cooked vegetables, and healthy ingredients, spinach roll is considered a wholesome and beneficial meal.
300 grams spinach
3 egg whites
½ cup mozzarella cheese
1 fresh garlic clove
1 onion
1 red bell pepper
1 medium carrot
1.5 tablespoons chopped fresh parsley
1 egg

Follow these steps to prepare this tasty and popular dish.
If you are using frozen spinach, remove it from the freezer and allow it to thaw completely. If using fresh spinach, clean it, wash it thoroughly, and chop it finely.
Preheat the oven to 200°C (392°F). Properly preparing the spinach helps create a soft and tender texture for the roll and ensures that excess moisture is removed.
If using frozen spinach, place it in a clean cotton cloth and squeeze firmly to remove extra water.
If using fresh spinach, sauté it in a pan with a small amount of oil until it becomes soft. Then remove any excess moisture.
Removing the water from the spinach helps the roll maintain its shape during baking and prevents it from becoming soggy.
Place the drained spinach in a bowl. Add the three egg whites and mozzarella cheese. Season with salt and black pepper, then mix well until the ingredients are evenly combined.
Cover a baking tray with parchment paper. Spread the spinach mixture onto the tray and smooth it with the back of a spoon until it is about 1.5 cm thick.
Place the tray in the preheated oven and bake for about 15 minutes until the spinach layer is partially cooked.
