Potato Do Pyaza with Tomato Paste Recipe

According to Saednews, A traditional and popular Iranian homemade dish made with potatoes and onions, known for its simple ingredients and rich flavor. It is a flexible recipe that can be enjoyed in different variations, including with or without tomato paste.


Ingredients

  • 4 large potatoes

  • 2 medium onions

  • 2–3 tablespoons cooking oil

  • Spices (salt, black pepper, turmeric) as needed

  • Tomato paste (optional), to taste


Instructions

Step 1: Boiling the potatoes

Wash the potatoes thoroughly and place them in a pot. Add water until it covers the potatoes by about 2–3 cm. Bring to a medium heat and let them cook.

Note: Some people peel and cube the potatoes first and boil them, while others cook them whole and cut them afterward.


Step 2: Cooking the potatoes

Let the potatoes boil for about 45 minutes until they become soft and fully cooked. Remove them from the pot, peel if needed, and allow them to cool.


Step 3: Preparing the potatoes

Cut the cooked potatoes into medium cubes. Some variations mash or grate them, but traditionally they are kept in chunky cubes for better texture.


Step 4: Cooking the onions

Heat oil in a pan. Peel and finely chop the onions, then sauté them until soft and translucent.

Add salt, pepper, and turmeric. Stir well until the raw smell of spices disappears.


Step 5: Combining ingredients

Add the chopped potatoes into the pan with the sautéed onions. Mix gently so the potatoes combine evenly with the onions and spices.

If desired, add tomato paste at this stage and mix well until the color and flavor are evenly distributed.


Step 6: Final cooking

Let the mixture cook for 20–30 minutes over low heat, stirring occasionally to allow flavors to blend.


Serving suggestion

Serve hot with fresh bread, pickles, and tomatoes.
