Diet Stew (Healthy Soy-Based Stew)
Soybeans: 1 cup
Onion (chopped): 2
Tomato paste: 2 tablespoons
Carrots (chopped): 2
Potatoes (chopped): 2
Parsley (finely chopped): 1/2 cup
Cinnamon and lemon juice: as needed
Salt, pepper, spices: as needed

Soak the soybeans in lukewarm water with a little salt for about 30 minutes.
Boil them for about 15 minutes with 1 teaspoon of cinnamon and some water.
Drain the soybeans, then grind or mince them. Add salt and pepper to the ground soy and sauté over low heat.
While sautéing the soy, add chopped potatoes, carrots, and onions and cook together.
Add tomato paste, salt, pepper, lemon juice, and 1 cup of water. Mix well.
Let everything cook over low heat until the ingredients are fully cooked and the stew thickens.
