Ingredients for Italian Apple Cake

  • Eggs: 2

  • White flour (cake flour): 200 g

  • Sugar: 100 g

  • Greek yogurt or plain yogurt: 125 g

  • Apples: 3

  • Chopped walnuts: 50 g

  • Baking powder: 16 g

  • Vanilla: ½ teaspoon

  • Lemon juice: 2 tablespoons

Ingredients for the Caramel Layer

  • Sugar: 80 g

  • Butter: 40 g

How to Make Italian Apple Cake

First, peel the apples and slice them thinly into half-moon shapes, then place them in a bowl.

Pour lemon juice over the sliced apples and mix well, then set aside to marinate.

Line the bottom of a round baking pan with parchment paper.

To prepare the caramel layer, add sugar to a pan and place it over very low heat.

Do not stir the sugar; let it melt slowly. Occasionally gently swirl the pan.

Once the sugar has completely melted, add room-temperature butter and quickly stir until a smooth caramel sauce forms.

Pour the prepared caramel into the baking pan over the parchment paper.

Arrange the apple slices in a circular pattern over the caramel layer and set aside.

To prepare the cake batter, beat the eggs with sugar and vanilla in a bowl using a mixer until the mixture becomes light, creamy, and stretchy.

Sift the flour and baking powder into the mixture and gently fold it in using a spatula from one direction.

Finally, add the yogurt and chopped walnuts and mix gently until just combined.

Pour the cake batter over the apple and caramel layer in the pan.

Bake in a preheated oven at 180°C (356°F) for about 45 minutes until fully cooked.

After baking, remove from the oven and let it cool. Then turn the cake out onto a serving plate and remove the parchment paper.

Your delicious Italian apple cake is ready to serve. Enjoy!

Important Tips for Baking Cakes at Home

  1. Bring all ingredients to room temperature at least 30 minutes before starting.

  2. Oven temperature and baking time may vary depending on the oven. If using a gas oven, you may need to increase the temperature by 10–20°C compared to an electric oven. Always preheat the oven.

  3. Use a digital scale and standard measuring cups for accuracy.

  4. When beating eggs, occasionally stop the mixer and scrape the sides of the bowl to ensure even mixing and avoid an egg smell.

  5. Always sift flour and dry ingredients at least three times to make the cake lighter and airier.

  6. Do not open the oven door before 30 minutes of baking, or the cake may collapse.

  7. Choose the right pan size so that the batter fills about two-thirds of the pan.

  8. Pour the batter from the center and spread it evenly.

  9. Metal baking pans (such as galvanized pans) are often a good and affordable choice for baking cakes.
