SAEDNEWS: Some people freeze fried onions to save time, but they should know the correct principles and storage methods to prevent fried onions from spoiling in the long term.
According to Saed News’ family section, for making fried onions it is essential to use healthy, high-quality onions. If an onion is soft inside or has an unpleasant smell, it should not be used, as the fried onions may spoil after some time.
Cut the onions into the desired size. Bring a pot of water to a boil. Add the chopped onions and let them boil for a few minutes until they become slightly soft. Then drain them in a colander and rinse with cold water.

After draining, spread the onions on a clean kitchen cloth and let them dry completely. Place a large non-stick pan or pot on heat and add enough frying oil once it is hot. Because the onions have been boiled, they will absorb less oil, but the oil level should still be sufficient for proper frying. Allow the oil to heat up well.
Fry a portion of the onions with salt and turmeric. Once they are ready, quickly remove them from the oil to prevent burning. Place the fried onions in a metal strainer or on paper towels to remove excess oil. These fried onions can be stored in the refrigerator or freezer. If kept in the refrigerator, they must be stored in an airtight container.

For freezing fried onions, always use a zip-lock bag and remove excess air (for example, using a straw). The method described above produces crispy fried onions. If you want brown, clumped fried onions suitable for dishes like “ash reshteh,” you do not need to boil them first. Instead, sauté the onions with salt without oil until slightly softened, then add oil. For this type, removing oil is not necessary.
If you plan to use them within 2–3 days, you can store them in a closed container in the refrigerator. However, this method is not recommended for long-term storage. The text claims that refrigeration may not eliminate all bacteria and toxins due to low reheating temperatures, so it is advised to avoid keeping them in the fridge for long periods.

Fried onions can be stored in the freezer for 3 to 6 months. However, the recommended time is about 6 weeks, as flavor and aroma are best preserved during this period and contamination risks are lower.
Cooking and frying onions reduces their nutritional value. Raw onions are a good source of vitamins C and B, which are beneficial for the immune system. However, frying causes these vitamins to diminish. Freezing also slightly reduces nutrients and freshness.
Therefore, it is recommended to consume foods fresh and raw whenever possible to preserve their nutritional benefits.
