According to Saednews, Making homemade and fresh verjuice (Abghooreh) at home is very easy. To prepare it, the type of unripe grapes used is not very important, but using Asgari grapes is preferable. It is also worth noting that some varieties of unripe grapes are more sour than others. If the sourness of the prepared homemade verjuice is not to your taste, it can be boiled for a few minutes to make it slightly thicker and more acidic. This process also increases its shelf life.
First, clean the unripe grapes and remove their stems.
Place the grapes in a large bowl of water, wash them thoroughly, and drain.
After draining, spread the grapes on a clean cotton cloth and let them dry completely.
Once dry, extract the juice using a juicer, or blend the grapes in a blender and then strain the mashed mixture through a sieve.
Pour the extracted juice into a glass container and let it sit for a few hours so that sediments and particles settle at the bottom.
Transfer the verjuice into a glass bottle and seal it tightly. To prevent air from entering, you can use one of the following methods:
Make a dough using water and flour and seal the bottle cap with it.
Use adhesive tape to tightly secure the bottle cap.
Pour one tablespoon of olive oil into the bottle to form a protective layer on top, then place a piece of plastic over the lid and close it tightly.

For long-term storage and better color, boil the verjuice with a small amount of salt. During boiling, remove any foam that forms on the surface. Keep the heat low, and after about 15 minutes remove it from heat, allow it to cool, and let sediments settle. Then carefully separate the clear liquid, strain it, and store it in a glass bottle with a tight lid.
The best type of grape for high-quality verjuice is seedless Asgari grapes, which are also suitable for making grape powder and cooking. Larger grapes generally yield more juice.
Remove stems and small woody parts completely to avoid a bitter or astringent taste.
If the sourness is not sufficient, boiling it for a few minutes will increase both its thickness and sourness, and also extend its shelf life.
Exposure to sunlight causes harmful chemical changes, so keep verjuice away from direct sunlight.
Do not store verjuice or other acidic liquids in plastic containers, as the acid can break down plastic and release harmful substances.
It is better to store verjuice in small glass bottles and consume it quickly after opening.
Use bottles with narrow openings to reduce the risk of mold formation.
The storage bottles must be completely dry.
To prevent mold, it is recommended to sterilize the bottles before use.

One of the most important points in preparing homemade verjuice is to always use sterilized containers (washed with boiling water and dried with a clean cloth) made of glass for storage. The use of plastic containers is strongly discouraged.
