SAEDNEWS: “Qignagh” is a type of khagineh (an egg-based dish) that is commonly prepared in East Azerbaijan Province, especially in the city of Tabriz.
According to Saednews, Khaagineh is one of the simplest and most fragrant traditional Iranian homemade desserts. It is prepared in a very short time using just a few basic ingredients. Flour: 4 tablespoons
Eggs: 4
Yogurt: 2 tablespoons
Grape molasses (or syrup): 2–3 tablespoons
Baking powder: 1 teaspoon
Walnuts: 3 tablespoons
Cardamom powder, cinnamon, and powdered sugar (for decoration): optional

To prepare a delicious khaagineh, first crack the eggs into a suitable bowl and beat them well using a hand whisk or even a spoon until fully smooth and combined. Then mix the flour and baking powder together.
Sift the flour and baking powder mixture once to make it completely smooth. Then sift it again gradually over the beaten eggs while continuously mixing to create a uniform batter.
Once the flour and eggs are fully combined, add the yogurt. Chop the walnuts coarsely and add them to the mixture. If desired, you can also add a little rosewater or cinnamon for extra aroma.
After the batter becomes completely smooth, place a suitable pan over heat and add a small amount of oil. Let the oil heat well, but keep the flame low.
When the oil is hot, pour the batter into the pan all at once and smooth the surface with the back of a spoon. Cover the pan and let one side cook completely.
Finally, after one side is golden and cooked, flip the khaagineh to cook the other side as well. Once fully cooked, cut it into pieces and pour grape molasses over it so it is absorbed. Serve in a dish of your choice and enjoy.
