According to Saednews, Mirza Ghasemi is a traditional and popular Iranian dish that was reportedly created and developed by Mohammad Qasem Khan, the governor of Rasht during the Qajar era under Naser al-Din Shah. It was later named after him. This flavorful dish is simple to prepare and remains a beloved part of northern Iranian cuisine.
In this guide, we will walk through the step-by-step preparation of Northern-style Mirza Ghasemi.
Eggplants: 5 medium-sized
Tomatoes: 2
Garlic: 1 whole bulb
Eggs: 3
Oil: as needed
Salt: as needed
Pepper: as needed

First, grill the eggplants over an open flame or in the oven until the skin is fully charred and the flesh becomes soft. Then peel off the skin and remove the stems.
Place the tomatoes in boiling water for a short time until their skins loosen. Remove the skins as well.

Finely chop or mash the grilled eggplants and peeled tomatoes, then place them in a suitable bowl.

Peel the garlic cloves and finely chop or grate them, depending on your preference.
Heat oil in a pan and fry the garlic until fragrant and lightly golden.
Add salt, pepper, and turmeric (optional but commonly used) to the eggplant and tomato mixture. Transfer everything into the pan and sauté until the mixture becomes well-cooked and starts releasing oil.

Push the mixture to one side of the pan. Crack the eggs into the empty side and stir them until fully cooked and scrambled. Then mix everything together thoroughly.

Your Mirza Ghasemi is ready. Serve it hot in a dish and garnish as desired.
