Buy fresh, high-quality tripe from a reliable butcher or market.
Cut the tripe open with a sharp knife so it lays flat like a smooth sheet. This makes it much easier to clean.
Sprinkle salt generously over the tripe.
Place the salted tripe inside a plastic bag and tie it tightly.
Leave the bag in the refrigerator overnight.
The next day, wash the tripe thoroughly with cold water.
Using this method, the tripe becomes completely clean and its color turns much lighter and whiter.
After washing, place the tripe in a colander to dry.
