According to Saednews, Gijavash Tareh is a simple, nutritious traditional dish from northern Iran, especially the Gilan region. It is a quick and easy herb-based omelet made with fresh local greens and duck eggs, known for its rich flavor and wholesome ingredients.
200 g Gijavash herb (fresh wild greens)
2 duck eggs
100 g garlic chives (or fresh garlic leaves)
½ teaspoon turmeric
Salt and black pepper, to taste
Cooking oil, as needed

Wash the garlic chives thoroughly and let them drain completely. Once dry, chop them into small pieces (about 0.5 cm) and set aside.
Wash the gijavash greens well, drain them, and chop them similarly into small pieces.
Crack the duck eggs into a bowl. Beat them well with a fork, then add salt and black pepper and mix again.
Heat some oil in a pan. Add the chopped garlic chives and sauté them with turmeric until lightly fried and aromatic.
Add the chopped gijavash to the pan. Stir and sauté for a few minutes, then reduce the heat. Cover the pan and let the herbs soften and cook through.
Pour the beaten eggs into the cooked herbs. Let them cook gently until the eggs are fully set. Then serve warm, preferably with rice.
