Soak the chickpeas
Clean and rinse the chickpeas, then soak them in a large bowl of water for about 12 hours. Change the water a few times during soaking.
Cook the chickpeas
Drain the soaked chickpeas and place them in a pot with garlic cloves. Cook over low heat until they become completely soft and tender.
Peel (optional but recommended)
For a smoother texture, remove the skins from the cooked chickpeas.
Blend the mixture
Add cooked chickpeas, softened garlic, olive oil, and lemon juice into a food processor or blender. Blend until smooth.
Add tahini and seasoning
Add tahini, salt, pepper, and 1–2 tablespoons of water. Blend again until the mixture becomes creamy and fully smooth.
Adjust texture
If the hummus is too thick, add a little more water and blend until desired consistency is reached.
Serve
Transfer to a serving dish, drizzle olive oil on top, and optionally garnish with parsley.
