Green beans: 600 grams
Cooked pinto beans: 2 cups
Carrots: 2
Large potato: 1
Medium onion: 1
Tomato paste: 2 tablespoons
Salt, black pepper, turmeric, and red pepper flakes: as needed
Sour grape juice (verjuice): ½ cup
Chopped parsley: 1 cup
Oil: as needed

To prepare this dish, soak the pinto beans for at least 24 hours in advance, then cook them with a little water and salt.
To start cooking, finely chop the onion and sauté it in a suitable pot with some oil over medium heat until it becomes soft and golden.
Add the chopped green beans, then season with salt, turmeric, red pepper flakes, and black pepper. Stir well.
Next, peel and cube the potato and add it to the pot along with the chopped carrots.
Add the tomato paste and sauté everything together for about one minute. Then add one to two cups of boiling water. You may replace tomato paste with fresh blended tomatoes for a richer flavor.
Cover the pot and reduce the heat so the vegetables cook slowly.
Then add the cooked pinto beans along with the verjuice and chopped parsley, and mix well.
Let the stew simmer for another 20 minutes. After that, your delicious bean stew is ready to serve. Enjoy your meal!
