SAEDNEWS: If Your Onions Never Turn Crispy and Caramelized, Make Sure You Follow These Few Simple but Important Tips
According to Saed News Cooking Service, “Majlesi fried onions,” also known as chip-style fried onions, are used to decorate various dishes such as ash reshteh and kashk-e bademjan. To achieve perfectly caramelized crispy fried onions, only a few simple but important tips must be followed during preparation.
After slicing the onions, place them in boiling water for 5 minutes. Then remove them, drain them, and let them dry completely. (After drying, the onions should look glassy and translucent.)
Once dry, fry the onions in a large pan filled with plenty of oil so that they are fully submerged.
A key point about the oil is to use proper frying oil, as regular cooking oil is absorbed by the onions and makes them soft instead of crispy.
When the onions turn lightly golden, remove them quickly from the oil. Then place them on a metal rack to drain excess oil. After they cool down, pack them and store them in the freezer.
