SAEDNEWS: Green bean salad is a healthy and nutritious mix that serves as a very delicious and tasty appetizer.

(for 4–5 people as a main dish, or 7–8 people as a side dish)

Green beans | 300 g |
Chopped carrots | 2 cups |
Chicken stock | 500 ml (2 cups) |
Potatoes | 800 g |
Salt | as needed |
Olive oil | 3 tablespoons |
Lemon juice | 1 tablespoon |
Black pepper | as needed |
Garlic (grated) | 4 cloves |
Mayonnaise | 1½ cups |
Ham | 250 g |
Chopped green onions | 1 cup |
Chopped tarragon | ½ cup |
Wash and clean the green beans, then cut them into 2–3 cm pieces.
Cook the green beans and chopped carrots in chicken stock until tender.
Peel the potatoes and cut them into desired shapes (about 500 g sliced potatoes). Boil them in a pot with water and 1 teaspoon of salt over medium heat until cooked.
Mix olive oil, lemon juice, salt, black pepper, and grated garlic together to prepare the dressing.
Drain the cooked potatoes and immediately mix them with the olive oil–lemon mixture. Let them cool, then combine with mayonnaise.
Cut the ham into small cubes.
Add the green beans, carrots, and ham to the potatoes and refrigerate.
Finally, mix in chopped green onions and tarragon before serving.

If tarragon is added too early, it may turn dark, so add it just before serving.
Potatoes can be cut in different shapes—for example, into small balls using a scoop, or you can use very small potatoes whole or halved.
