SAEDNEWS: Walnut halva of Urmia is one of the most famous souvenirs of the city of Urmia. This walnut-based halva is highly popular among the people of the city as well as across the country, and the reason for its popularity is its truly unique and delicious taste.
According to Saednews, Halva is one of the oldest and most traditional Iranian desserts. It is commonly served during Ramadan iftar meals as well as in mourning ceremonies such as Muharram gatherings. One of its traditional varieties is Urmia walnut halva, originally from the city of Urmia. This version is made using mulberry syrup, date syrup, or grape syrup, making it highly nutritious. The addition of walnuts further enhances its flavor and health benefits.
Mulberry, grape, or date syrup: 1 cup
Milk: 1 cup
Warm water: 1 cup
Sugar: 1 cup
Butter: 150 g
Flour: 2 cups
Chopped walnuts: 1 cup
Ground walnuts and pistachios: for decoration

In a bowl, mix sugar, warm water, and your chosen syrup (mulberry, grape, or date). Stir well until the sugar is completely dissolved and the mixture becomes smooth and uniform.
Place a pan over medium heat and add the butter. Once melted, add the flour and begin roasting it over medium heat, stirring constantly.
Continue stirring with a wooden spoon for about 20–25 minutes. At first, the flour will clump, but it will gradually separate and become smoother. When it turns light brown, remove it from heat.
Slowly pour the prepared syrup into the roasted flour while continuously stirring. Return the pan to heat and keep mixing until the syrup is fully absorbed and the mixture darkens and thickens.
Once the mixture reaches a firm consistency, add chopped walnuts and mix well until the halva gathers on one side of the pan.
This process takes about 5 minutes after adding the syrup.
Transfer the halva into a small mold and press it down evenly with a spoon. Refrigerate for 3–4 hours until firm. Then remove from the mold, slice, and serve. Optionally garnish with ground walnuts and pistachios.
