Instructions (Grated Eggplant Cutlet with Potato)

  1. Boil the potato, peel it, and let it cool.

  2. Peel the eggplants and grate them coarsely.

  3. Soak grated eggplants in salted water for 30 minutes to remove bitterness.

  4. Drain and rinse to remove excess salt.

  5. Squeeze out all excess water from the eggplants.

  6. Lightly sauté the grated eggplants in a pan with a little oil.

  7. Grate the boiled potato.

  8. Grate the onion finely and squeeze out its juice.
