Step-by-Step Cooking Instructions

Step 1: Preparing ingredients

Rinse the black-eyed peas and soak them for a few hours. Wash the meat and drain it. Clean and finely chop the herbs (leek, parsley, fenugreek). Peel and chop the garlic and onions.

Step 2: Sautéing the base

Heat some oil in a pot. Add chopped onion and sauté until soft. Add turmeric and mixed spices and stir briefly to release their aroma. Then add garlic and sauté lightly.

Step 3: Cooking the meat

Add the meat to the pot. Pour in about 2 cups of water, then add salt and pepper. Bring to a boil, then reduce heat and let it simmer until the meat starts to soften.

Step 4: Preparing herb mixture

In a separate pan, sauté the second chopped onion until golden. Add the chopped herbs and cook for a few minutes. Set aside.

Step 5: Adding main ingredients

Peel and quarter the potatoes. Add soaked black-eyed peas and the sautéed onion-herb mixture to the meat pot. Score the dried limes slightly and add them as well.

Step 6: Tomatoes and simmering

Cut tomatoes into quarters and add them to the pot. Add tomato paste, then lower the heat and let everything cook slowly until the stew thickens and flavors blend.

Step 7: Final seasoning and serving

Taste and adjust salt and pepper if needed. Your black-eyed pea abgoosht is ready. Serve it hot with fresh bread and herbs.

Tips for a Better Abgoosht

  • Soak black-eyed peas for at least 2 hours for better texture and digestion.

  • Add dried limes toward the end of cooking to preserve their aroma.

  • If the stew becomes too thick, add a little hot water.

  • If it is too thin, let it simmer longer to reduce.

  • It can also be served with rice if desired.
