How to Make Caponata Sauce

The total preparation and cooking time is approximately one hour: about 30 minutes for preparation and another 30 minutes for cooking.

Step 1: Prepare the Eggplant

Peel the eggplant and soak it in salted water for about one hour to remove its bitterness. Drain and dry it thoroughly.

Step 2: Cook the Celery and Eggplant

Remove the leaves and ends of the celery, then chop it. Sauté the celery in a pan with some oil for a few minutes. Add the eggplant and continue frying until it becomes tender and changes color.

Step 3: Add the Vegetables

Wash and finely chop the bell pepper, onion, and garlic. Add them to the pan and sauté all the ingredients until the vegetables become soft and translucent.

Step 4: Add the Tomatoes

Finely chop the tomatoes and add them to the pan along with salt and pepper. Continue sautéing the mixture.

Step 5: Add the Raisins and Thyme

Add the raisins and thyme and stir well until all the ingredients are evenly combined. Reduce the heat and let the sauce simmer for about 20 minutes, or until the vegetables are completely cooked.

Step 6: Add the Vinegar, Sugar, and Capers

Mix the vinegar and sugar in a small bowl, then add the mixture to the pan along with the chopped capers. Taste the sauce and adjust the salt and pepper if necessary.

Step 7: Finish with Mozzarella

Chop the mozzarella and add it to the sauce. Stir gently until the cheese softens and blends into the sauce. Your caponata sauce is now ready to serve.

Serve the caponata sauce with pasta, pizza, lasagna, bread, or any other dish you like. Enjoy!

Helpful Tips for Making Caponata Sauce

  • If you prefer, you can leave some of the eggplant skin on. This can give the sauce a deeper and more attractive color.

  • The quantities listed above are enough for approximately six servings of pasta. However, the amount of caponata you use in each dish can be adjusted according to your preference.

  • Fresh thyme can be replaced with dried thyme powder.

  • If capers are not available, you can use venushka (Persian wild pistachio buds) as an alternative.

  • Soaking the eggplant in salted water before frying is important because it helps remove its bitterness and excess sharpness.
