With its soft, airy sponge, creamy filling, and perfectly balanced fruity flavor, it is an excellent choice for parties, afternoon tea, and family gatherings. This easy recipe shows you how to make a delicious apricot roll at home.
Ripe apricots: 300 g, preferably soft and sweet
Eggs: 3, at room temperature
Sugar: 100 g, for the sponge
All-purpose flour: 100 g, sifted
Vanilla: a small pinch, for flavor
Cold whipping cream: 200 ml
Powdered sugar: 3 tablespoons, for the cream
Orange juice: 100 ml, for cooking the apricots
Powdered sugar: as needed, for decorating
Wash the apricots, remove the pits, and cut them into small pieces.
Place the chopped apricots and orange juice in a small saucepan.
Cook over low heat until the apricots become soft and most of the liquid has evaporated, about 15–20 minutes.
Once softened, mash the apricots with the back of a spoon until they reach a marmalade-like consistency. Set aside and allow them to cool completely.
Prepare the oven and tray: Preheat the oven to 180°C (350°F). Line a 30 × 40 cm baking tray with parchment paper and lightly grease it.
Beat the eggs and sugar: Place the eggs and sugar in a large bowl. Beat with an electric mixer for 5–7 minutes, until the mixture is pale, fluffy, and thick. When you lift the beaters, the mixture should fall in a ribbon and remain visible briefly on the surface.
Add the vanilla and flour: Add the vanilla. Gradually add the sifted flour in three portions, gently folding it in with a spatula using upward, circular movements. Avoid overmixing so the batter remains light and airy.
Bake the sponge: Pour the batter into the prepared tray and spread it evenly with a spatula. Bake for 10–12 minutes, until the surface is lightly golden and no batter sticks when touched.
Immediately after removing the sponge from the oven, place a clean cotton kitchen towel on your work surface and carefully turn the sponge onto it, keeping the parchment paper attached.
Gently remove the parchment paper.

Roll the sponge again, this time more firmly.
Wrap the finished roll in parchment paper or plastic wrap and refrigerate for at least 2 hours so it can firm up and hold its shape.
