How to Make Rasht-Style Shapouri Omelet

Step 1:
Prepare the canned beans. You can also use homemade bean stew, depending on your preference and the time available.

Step 2:
Melt the butter in a suitable frying pan over low to medium heat.

Step 3:
Add the tomato paste to the melted butter and sauté until its raw smell disappears and the paste becomes slightly darker.

Step 4:
Add turmeric, salt, black pepper, and orange blossom juice (or fresh lemon juice) to the tomato paste. Stir and sauté briefly to combine the flavors.
