300 g spinach
1 tablespoon sugar
1 cup Béchamel sauce
1 tablespoon all-purpose flour
250 g ham or bologna, chopped
100 g butter
50 g Gruyère cheese
4 egg yolks
4 egg whites
Salt and pepper, to taste

Separate the spinach stems from the leaves and wash the leaves thoroughly. Place the spinach in a pot with 1 teaspoon baking soda, a little salt, and 2–3 cups of water. Keep the pot uncovered and bring the spinach to a boil, stirring it several times during cooking.
Once the spinach comes to a boil, reduce the heat and cook for about 15 minutes, stirring occasionally. Drain the cooked spinach in a colander and press it gently to remove excess water.
Melt the butter in an enamel or heatproof pan over low heat. Add the flour and stir until the flour is lightly toasted. Add the drained spinach and cook, stirring, until all the remaining moisture has evaporated.
Remove the spinach mixture from the heat and stir in the chopped ham. Add the Béchamel sauce and mix thoroughly.
In a separate bowl, divide the eggs into yolks and whites. Beat the egg whites until stiff peaks form and they remain in the bowl when it is tilted. Beat the egg yolks separately until light, fluffy, and pale.
Combine the egg yolks with the spinach mixture. Then gently fold in the whipped egg whites, taking care not to deflate them.
The spinach and ham mixture is now ready to be baked as a light and fluffy soufflé.
