Below is a simple recipe for making flavorful homemade apple jam, along with a few useful tips for achieving the best texture and taste.
Apples: 1 kg (preferably sweet and juicy varieties such as Golab or Red Delicious)
Sugar: 700–800 g, depending on the sweetness of the apples
Fresh lemon juice: 2–3 tablespoons
Cardamom or cinnamon: Optional, for extra aroma and flavor
Water: About 1 cup for the initial cooking
Peel the apples, remove the cores and seeds, and cut them into small cubes or thin slices. To prevent the apples from turning brown, place the cut pieces in cold water with a little lemon juice while preparing the rest.
Place the chopped apples and water in a suitable pot, preferably stainless steel or enamel-coated. Cook over low to medium heat for about 15–20 minutes, or until the apples become tender.

Add the sugar to the softened apples and stir until it dissolves completely. Increase the heat and bring the mixture to a boil.
Reduce the heat and allow the jam to simmer gently until it becomes thick and glossy. This usually takes around 30–45 minutes. Stir occasionally to prevent the jam from sticking to the bottom of the pot.
During the final 10 minutes of cooking, add the lemon juice along with crushed cardamom or a cinnamon stick, if desired. Lemon juice helps maintain the jam's clarity and reduces the chance of crystallization.
