5 medium-sized eggplants
4 cups sugar
2 cups water
2 tablespoons lemon juice
½ teaspoon vanilla
1 teaspoon cinnamon (optional)
2 tablespoons brewed saffron (optional)
2 cloves (optional)
First, wash and peel the eggplants. Cut them into small cubes or thin slices, then place them in cold water for about 30 minutes to remove any bitterness.
In a pot, combine the water and sugar and bring the mixture to a boil. Cook it over low heat for more than an hour until the syrup becomes thick. Add the lemon juice and stir well to help preserve the jam’s color and flavor.

Add the prepared eggplants to the syrup and cook over low heat for 45 minutes to one hour until the jam is fully cooked.
During cooking, stir the jam occasionally. If using cinnamon and cloves, add them at this stage. At the end of cooking, add the vanilla and brewed saffron and mix well.
To check the consistency, place a small amount of jam on a cold plate. After it cools, test its thickness with your finger or a spoon. If it is too thin, continue boiling until it reaches the desired consistency.
Pour the finished jam into clean, dry jars and close the lids tightly. Sterilize the jars by placing them in boiling water for more than five hours. Then turn the jars upside down and allow them to cool completely.

Use fresh, small, and blemish-free eggplants for better texture and flavor.
Use a thick-bottomed pot to ensure even cooking and proper thickening.
Adjust the amount of sugar according to your taste, but make sure the syrup becomes sufficiently concentrated.
Store the jam in a cool, dry place. Properly sterilized jars can help preserve it for several months.
If the jam becomes too runny after cooling, boil it again until it reaches the right consistency.
