How to Make Restaurant-Style Chelow Kebab Barg
Chelow Kebab Barg is one of Iran’s most popular dishes, known for its tender meat, aromatic saffron flavor, and delicious combination of grilled kebab served with fluffy Persian rice.
Place the meat on a working surface. Using a meat mallet or the back of a knife, gently pound the meat until it becomes thin and evenly flattened. The thickness should be around half a centimeter throughout the entire piece.
If the meat is too thick, divide it into two thinner pieces. After flattening, cut the meat into suitable strips. The ideal width for threading Barg kebab onto skewers is about four finger-widths, though it can be slightly smaller for homemade versions.
Place the prepared meat in a suitable bowl. Add vegetable oil, thickly sliced onions, brewed saffron, salt, and black pepper.
Mix the ingredients well so the seasoning covers every part of the meat. Cover the bowl with plastic wrap and refrigerate for at least 8 hours to allow the flavors to fully absorb into the meat.
