According to Saednews, Paneer tikka, a fragrant and spiced paneer dish, is one of the most delicious foods from India. If we were to summarize Indian food culture in one sentence, it could be said that eating Indian cuisine feels like diving into an ocean of spices. You may have heard that Indian dishes are extremely spicy, but the truth is that chili is not the only spice widely used in India. Indians enjoy using a wide variety of spices to create rich and complex flavors.
In this recipe, we will learn how to prepare Indian pan-fried paneer tikka. This cooking method does not require any special kitchen equipment and can be easily made using only a frying pan.
250–300 grams paneer (you can use grilling paneer)
1 large green, yellow, or red bell pepper
1 large tomato
1 large onion
250 grams thick yogurt
4 tablespoons chickpea flour (besan)
½ teaspoon turmeric powder
½ teaspoon black or white pepper
½ teaspoon cumin seeds
½ teaspoon black cumin seeds
½ teaspoon dried fenugreek leaves
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon tandoori spice mix or garam masala
1 teaspoon dried mango powder (amchur)
1–2 teaspoons hot red chili powder
2 cm grated ginger
5–6 crushed garlic cloves
¾ teaspoon lemon juice
2–3 tablespoons oil
¾ teaspoon salt
First, whisk the yogurt with a fork or hand whisk until it becomes smooth and consistent. Add all the spices to the yogurt and mix well.
Cut the paneer and vegetables into 2–3 cm square pieces. Add them to the spiced yogurt mixture and coat them thoroughly. Allow the ingredients to marinate in the refrigerator for 45 minutes to 3 hours so that they absorb the flavors.
For each batch of frying, add one tablespoon of oil to a non-stick pan. Once the oil is hot, place the paneer and vegetable pieces into the pan while they are still coated with the yogurt marinade. Fry them until they become golden and lightly crisp.
You can also place the marinated pieces onto wooden skewers before frying. However, when prepared this way, the spaces between the vegetables may not cook evenly unless the skewers are fully exposed to the oil.
Once one side is cooked, carefully turn the pieces over and fry the other side. Keep in mind that paneer cooks faster than vegetables, so remove the paneer pieces from the pan earlier to prevent them from becoming too firm.
Arrange the fried pieces on a serving tray. It is better not to place them on paper towels because the paneer may stick to the paper. You can serve them directly or place them on wooden skewers before serving.
