Chicken and eggplant stew is a flavorful, nutritious, and easy-to-make meal that can be prepared at home with a few simple ingredients in a short time. This dish is especially suitable for dinner or a light evening meal. Follow this recipe to learn how to make a delicious eggplant and chicken stew.

Ingredients for Chicken and Eggplant Stew

  • 4 pieces of chicken with bones

  • 1 chopped onion

  • 4 cloves of grated garlic

  • 3–4 eggplants

  • 6 tablespoons fresh lime juice or sour grape juice (verjuice)

  • 4 tablespoons unripe grapes (ghooreh)

  • Salt, black pepper, and spices as needed

  • Tomato paste as needed

  • Fresh tomatoes

  • Oil for cooking

How to Prepare Eggplant and Chicken Stew

Start by preparing the chicken, similar to making saffron chicken. Heat 2 tablespoons of oil in a large pot and fry the chicken pieces over high heat for about 5 minutes. Turn the chicken pieces once so they become golden on all sides. Remove the chicken from the pot and set it aside.

Add the chopped onions to the same pot and sauté them over medium heat for about 10 minutes until they become lightly golden. Add the grated garlic and turmeric, then cook for another 2 minutes. Add the tomato paste and sauté for another 2 minutes to enhance its flavor.

Return the chicken to the pot and add chopped tomatoes, water, 1 teaspoon of salt, and black pepper. Cover the pot and bring the mixture to a gentle boil. Reduce the heat and allow the chicken to cook slowly for about 30 minutes.

While the chicken is cooking, peel the eggplants and cut them into quarters. Mix them with the remaining salt. In a large pan, sauté the eggplants over medium heat with a small amount of oil for 15–20 minutes until they become slightly golden on all sides. Remove the eggplants from the pan and set them aside.

After the chicken has cooked for 30 minutes, add the verjuice (or fresh lime juice) and unripe grapes to the stew. Stir gently and cook for another 30 minutes.

Place the partially cooked eggplants on top of the stew and gently press them down so they absorb the flavors of the sauce. Cover the pot and cook for another 30 minutes over low heat.

At this stage, the chicken should be tender and fully cooked. Remove the stew from the heat, adjust the seasoning if needed, and let it rest for 5 minutes before serving.

Transfer the stew carefully to a serving dish without breaking the eggplants too much, so they maintain their shape and presentation.
