SAEDNEWS: With this simple and delicious recipe, cook juicy chicken breast filled with ham and cheese in the Neapolitan style of Naples, Italy, at home.
Neapolitan-Style Chicken Breast (Serves 4)
Ingredients:
4 skinless chicken breasts (1 per person)
4 slices Serrano ham (1 per person)
4 slices soft Manchego cheese (or another cheese of choice)
Ground white pepper
Provençal chicken seasoning (or other seasoning mix)
Dried oregano
3 garlic cloves
1 onion
Eggs (for coating the chicken breasts)
Breadcrumbs
Salt
Extra virgin olive oil
Grated cheddar cheese (for melting; or substitute with another type)
400 g homemade cooked tomato sauce (store-bought can be used if high quality)

Prepare the chicken
Flatten the chicken breasts slightly (you can gently pound them so they cook evenly).
Season both sides with salt, white pepper, oregano, and Provençal seasoning.
Stuff the chicken
Place one slice of Serrano ham and one slice of Manchego cheese on each chicken breast.
Fold or roll the chicken to enclose the filling (or leave open as a stuffed escalope style).
Coat the chicken
Dip each piece first in beaten eggs.
Then coat evenly with breadcrumbs.
Fry lightly
Heat olive oil in a pan over medium heat.
Fry the chicken until golden on both sides (it does not need to be fully cooked yet).
Remove and set aside.
Prepare the sauce
In the same pan, sauté chopped onion and garlic until soft and fragrant.
Add the tomato sauce, season lightly with salt and oregano, and simmer for 5–10 minutes.
Assemble and bake
Place the chicken in a baking dish.
Pour the tomato sauce over the chicken.
Sprinkle grated cheddar cheese on top.
Bake
Bake in a preheated oven at 180°C (350°F) for about 20–25 minutes, until the chicken is fully cooked and the cheese is melted and bubbly.
Serve hot with rice, mashed potatoes, or a fresh green salad.
